February 2011 - Bruschetta Chicken Bake
Ingredients:
1 can (14.5 oz) diced tomatoes, undrained
1 package (6 oz) Stove Top Stuffing Mix for chicken
1/2 cup water
2 cloves garlic, minced
1 1/2 lb. boneless, skinless chicken breast tenders
1 cup Kraft shredded low-moisture part-skim Mozzarella Cheese
Directions:
1. Preheat oven to 400 degrees
2. Place tomatoes with their liquid in medium bowl.
3. Add stuffing mix, water, and garlic to bowl with tomatoes.
4. Stir until stuffing mix is moistened. Set aside
5. Place chicken in 13x9 baking dish, sprinkle with mozzarella cheese.
6. Top chicken with stuffing mixture.
7. Bake for 25 minutes
